Use to be Fat

. I used to be 20 stone 4 years ago. Through blood sweat and tears I have worked my way down this is a place to track my progress from now, I think it will help me work my way to what I want to look like.

Egg "Muffins"


So basically these are omelets just baked in muffin tins! You can use whatever ingredients you like! pictured is sausage, peppers and spinach egg muffins.


Preheat oven to 375 degrees. Spray muffin pan lightly with cooking spray

In a skillet, cook any meat you like until cooked through. Make sure to break it up into “crumb” size pieces. whether it be sausage/bacon/ham/ect.

Sautee vegetables of your choice until they get soft. (ex red bell peppers, spinach, onion)

Set aside in bowl with meat and vegetables

In another bowl, whisk together eggs, salt and pepper. Combined with the other mixture and cheese if you like.

Then put mixture into muffin mold about 1/2 full.

Bake the egg muffins for 20 to 25 minutes or until eggs are set in the middle.

Muffins can be stored in an airtight container in the refrigerator for up to 6 days. Great to make a batch and eat throughout the week. Just heat up for a bit in the microwave and you’re good to go!
